Turkey, Feta, Spinach Muffins
One of the healthier recipes I started making years ago that my husband LOVES & my kids will eat is for Turkey Feta Spinach Muffins (first inspired by The Gracious Pantry & made it my own).
You can make them as burger patties or even more of a meatloaf, but we love them cooked in a muffin tin.
I had 2 for dinner with asparagus, mashed potatoes, & black eyed peas... and the kids ate it all too! (Picture included from our actual dinner.)
Here’s how I make it, don’t be afraid to change it up to make it your own:
1 lb ground turkey
3 eggs
1 small container feta cheese
1/2 cup diced mushrooms
2-3 huge handfuls of spinach (massage & chop)
1/4 cup diced red onion (optional)
Garlic, S&P, and whatever other seasonings you like (we throw some crazy stuff in there sometimes!)... all to taste
Sometimes I add ground flaxseed or other seeds as well.
Mix altogether, spoon into muffin pan w/ a little olive or avocado oil, and bake at 375° for 25ish mins (keep watch as not to dry them out).
